Grilled Cheese and Tomato Soup

When I was a poor college student I used to go to my dorm room at lunch time on cold afternoons and make myself a grilled cheese sandwich and a bowl of Campbell's tomato soup. So in honor of the first snow day of the school year in Nashville...

...here is my grown up version of that lunch, made with three types of cheese and a more sophisticated version of tomato soup.



Grown-Up Tomato Basil Rice Soup
1 jar of tomato basil spaghetti sauce (I like Barilla)
1 can of chicken stock
1 tablespoon dried  basil, chopped
1 cup of rice
Salt and pepper to taste

Combine all ingredients except for salt and pepper and cook over medium heat for 10-15 minutes, until rice is cooked through. Add salt and pepper to taste.

Grown-Up Grilled Cheese Sandwiches
2 slices of whole grain bread
1 tablespoon of butter, softened
1 tablespoon of olive oil
1 slice of Muenster cheese
1 slice of Monterey Jack cheese
1 slice of sharp cheddar cheese

Place slices of cheese between the bread. Heat olive oil and butter in a skillet until the butter is melted and sizzling. Saute the sandwich on both sides until cheese is melted and the bread is golden brown on both sides, about 1-2 minutes on each side.

Serve with hot cocoa and you've got a filling meal to keep you warm all afternoon!
