Plum Cake Tatin

Many of my recipes are borne out of a desire to get rid of food that has been hanging out in the fridge for a little too long. Take these plums.


I went to Costco, thinking that FOUR pounds of plums was a great idea. Now two weeks later, we have only eaten 3 plums and now we are about a week away from having a new version of wildlife in the back of the fridge. Fortunately, I have found that roasting, stewing or making soup out of something can rescue it immensely.

Ahh, the plum cake tatin, from Barefoot Contessa. You take some of the aforementioned plums...


Plus some caramel (careful kiddos, it's HOT!) and cake batter...


And then you get this lovely vision of cakey goodness. Add some homemade whipped cream or vanilla or rum raisin ice cream and you have dinner dessert.
