Asparagus with Bacon and Onion

I have said before that everything is better with bacon. Or maybe I said that everything is better with butter. Whatever. Here is a perfect simple appetizer that you can pair with pan roasted chicken or pork tenderloin.


Asparagus with Bacon and Onion

1 cup chopped onion
6 strips of bacon cooked but not crispy and chopped
2 tablespoons of olive oil or bacon drippings
1 pound of asparagus trimmed and cut into approx 1 1/2 inch pieces

Heat the olive oil over medium high heat. Add the onions and saute until translucent and lightly browned, about 6-7 minutes. Stir in the bacon and immediately stir in the chopped asparagus. Cook until asparagus is tender-crisp.
