The Opa! Sopa! Project

Opa! - exclamation - a Greek word used to describe a jubilant emotion of or during celebration. 
It is another way of expressing joy and gratitude to God, life, and others, for bringing us into the state of ultimate wisdom - that all that really matters is health, family and friends.  Usually accompanied by breaking of plates and glasses.*

Examples of translations:
"Hooray!" (See the "If you're happy and you know it" video for example).
"Hell yeah!"
"Yeehaw!"
 
Sopa - noun - Spanish for soup, a liquid based meal, often consisting of vegetable, fish or meat broth, containing solid pieces of vegetables, poultry, meat or seafood.

Soup evokes the following memories for me...
...staying home sick from school with my mom when I had chicken pox in first grade and eating chicken noodle soup.
...having nearly no money in college for groceries but still eating the classic comfort food meal of tomato soup and a grilled cheese sandwich for lunch.
...sneaking pureed vegetables into my unsuspecting toddler's dinner so that she won't eat just beige food for a year.
...Hearth. Home. Comfort. Love.

The Opa! Sopa! Project (loosely, Woohoo! Soup!) is hopefully going to be my little contribution to my friend E and his family who are going through a very unexpected cancer diagnosis right now.  His diet may be restricted to soups and soft foods for a while and there is only so much pudding and applesauce a person can eat. I will be attempting to make a one or two of these recipes a week and chronicling them through photography and recipes and reviews.  And of course, E and his family are the lucky test subjects.  Love you guys and praying for a miracle...
