All the bakers out there will probably cringe, but I am a HUGE, gigantic fan of using box mixes for a lot of baked goods that I make. I will usually make cookies, biscuits and muffins from scratch, but have yet to see the utility in trying to improve on a $1.50 box of Duncan Hines or Betty Crocker cake mixes.
To go along with the spareribs we made, I did these cornbread muffins from Jiffy. I made them exactly as the package directed, but did the mini-muffin size, which serves a dual purpose:
1) The mini muffins are the perfect size for the Kid's lunchbox for school.
2) Miniature food actually has negative calories, if you didn't know.
Trust me, I'm a doctor.
