Brinner...

I love brunch. Probably because I also love breakfast so much and everything that breakfast entails, including a bevvy of eggs, pork products and orange juice cocktails like mimosas. The only thing better than brunch is brinner (breakfast @ dinner, for those who haven't had their coffee yet) and it is such a great way to get a fun, quick meal on the table fast.

This past weekend, I made one of those famous trips to Target where you run in to get "just one thing" and you leave with totally unnecessary items, like my first waffle maker. So the plan for brinner was hatched. First up on the menu was an asparagus and sausage frittata (way easier than making a bunch of omelets and a good way to sneak veggies into unsuspecting 2-year olds).



Asparagus and Sausage Frittata (adapted from the Martha Stewart Living Cookbook)

6 eggs, beaten
2 Tbsp Parmesan cheese
2 Tbsp olive oil
10 spears of asparagus, cut into 1-inch sections
1 Italian cooked link sausage, sliced into 1/4 inch slices and halved
Salt, pepper to taste

Heat olive oil in oven proof skillet. Saute the asparagus until tender-crisp and add the chopped sausage until heated through. Add the salt, pepper and eggs and cheese in a bowl and then add to the skillet and let cook until the edges are firm, about 3-5 minutes. Place in a preheated oven of 375 degrees for about 8-12 minutes until set and turn onto a plate. Allow to cool slightly and then slice into wedges. Serve warm. Serves 4-6 people.


In addition to the frittata, we made buttermilk waffles (recipe courtesy of the side of the Jiffy baking mix box, plus some extra sugar, cinnamon and *almost bad* buttermilk - seriously, it's the best stuff for waffles or biscuits) turkey sausages...

and a strawberry, blueberry pear compote to top the waffles. Add a couple of mimosas and dinner is served!
