California Flatbread Pizzas

Yet another winner from the Barefoot Contessa. I am in love with the white pizza from a restaurant we have here, California Pizza Kitchen. Unfortunately, getting there whenever a pizza craving strikes is not always feasible. We were looking for a nice, light lunch to do after church that would use up some of the cheese we have (I have a tiny bit of a cheese obsession - sort of like my obsession with black shoes) and also sneak some vegetables into the Kid. Toppings, from L to R, from back to front: Pecorino Romano, extra sharp provolone, Parmigiano Reggiano, an herbed Ricotta mixture (mix of ricotta, salt pepper, parsley, oregano and garlic powder), bacon, spinach, tomatoes, turkey sausage and caramelized onions


No, it's not the shroud of Turin, just my flatbread dough hiding out.


I have never made flatbread dough before, so don't be surprised that it doesn't rise like regular pizza dough or bread dough - hence the name flatbread (I'm so smart). I realized later that I forgot to add salt to the dough, but the end product was great!

Version #1: Four cheeses, tomatoes and spinach


Version #2: Four cheeses, sausage and caramelized onion.

Versions #3 and #4: in my belly! Rubbing my food baby lovingly...
