Yet another winner from the Barefoot Contessa. I am in love with the white pizza from a restaurant we have here, California Pizza Kitchen. Unfortunately, getting there whenever a pizza craving strikes is not always feasible. We were looking for a nice, light lunch to do after church that would use up some of the cheese we have (I have a tiny bit of a cheese obsession - sort of like my obsession with black shoes) and also sneak some vegetables into the Kid. No, it's not the shroud of Turin, just my flatbread dough hiding out.
I have never made flatbread dough before, so don't be surprised that it doesn't rise like regular pizza dough or bread dough - hence the name flatbread (I'm so smart). I realized later that I forgot to add salt to the dough, but the end product was great!
