We fired up the grill for the first cookout of the season this past weekend and how I have missed summer! After this crazy winter and the flooding in Nashville (people are still cleaning up), it was nice to sort of just kick back for a lazy afternoon of grilling.
On the menu was salmon burgers on whole wheat buns, topped with red onions, cucumber dill sauce and lettuce, accompanied by a nice ear of grilled sweet corn. My shortcut was to get the salmon burgers premade from Costco (where else) and make the sauce to go with it.
Cucumber Dill Sauce
1/2 cup light sour cream
1/2 cup plain yogurt
1 cucumber, peeled, seeded and diced
2 teaspoons of fresh dill
2 cloves of garlic, minced
Juice of 1/2 a lemon
Kosher salt, to taste
Combine ingredients in a bowl and let sit for 1-2 hours.
Goes well with fish and lamb.
Tomorrow, the best homemade ginger ale!
